With yet ANOTHER snow day today, everyone had a hankering for grilled cheese sandwiches, and what better to go with that than a bowl of homemade Fire-Roasted Tomato Basil Bisque?
Once you've had a bowl of this, you'll never look at regular 'ole tomato soup the same way again! Perfect for dunking melty grilled-cheese sandwiches into, but perfectly wonderful all on its own. Of course, Skipper thinks it should be against the law to have tomato soup WITHOUT grilled cheese sandwiches, but he's a guy that also puts sliced pantry pickles INSIDE his grilled cheese sandwiches...one of his family traditions that continues to this day.
For a creamier soup, you will blend this in your blender, half-a-blender full at a time - any more than that and you run the risk of the top flying off your blender because of the heat. If you like a chunkier texture, simply use an immersion blender in your soup pan. Either way, it is wonderful on a icy, snowy, freezing night!
