And through the years, I've made more batches of these old-fashioned and classic peanut butter cookies than I can count.

Did you ever have one of those mornings where it was just hard to get your battery started? Today was an exception. And what a treat that Kelsey is my guest baker today! She was up early with her boys, pulling out the muffin pans, and had both little ones up on the island mashing bananas and measuring and pouring - they LOVE to help out in the kitchen!

I'm always surprised when someone tells me they don't like Buffalo Chicken Dip - we've got toddlers around that will knock that savory stuff off as fast as we bring it out!
So many backyard barbeques and parties going on during the sizzling summer, I brought this savory variation out and it was gone. In a flash. Like people were standing around the table just shoveling this into their mouths and not coming up for air! If you get a chance to make this wonderful variation of the classic, it has a wonderful smoky, cheesy barbeque taste to it. Ribbons of hot barbeque sauce and melted cheese with tender chicken - what's not to love? We love how easy homemade granola is to make - and it is sooooo much better than anything you can buy at the store! The maple flavor is delicate, and the granola and pecans are perfectly chewy and have a nice crunch.
My Maple Almond Granola is always a big hit, but sometimes I like to switch out the almonds with pecans! This is also wonderful crumbled on top of apple crisp or a fresh scoop of vanilla bean ice cream. My, how I love me some streusel almond topped coffee cake - so moist and flavorful that it just melts in your mouth! This beautiful breakfast cake comes together quickly - and if you make it in the evening, it actually tastes even better the next morning.

This is a wonderful base drink, with little or no sugar added, depending on the sweetness and full flavor of your watermelon and your personal taste. I was SO EXCITED to see fresh Copper River Sockeye Salmon finally hit our market this weekend!
Sockeye is the sirloin of salmon, premier from the Copper River in Alaska - very firm and meaty and with a deep red color, and when it's fresh and available, it's a true treat here at my house. Trouble was, what favorite recipe to use for this delectable treat? I had picked up two very large pieces of fish, so I ended up making our three favorite recipes, all of which are posted here today. All three variations were perfect...and just as they differ from each other, everyone in the house had a different favorite, but it sure was nice to be able to have a small piece of each one for a comparison - better than the finest seafood restaurant! Salmon is wonderful cooked on cedar planks on the grill. It's also very easy to bake the salmon and prepare for the different glazes - I place mine in a large flat roaster pan, skin side down, and then add our favorite white wine to the pan, pouring until it is about 1/2" deep around the fresh salmon. Bake at 400 degrees for about 10 minutes per inch of thickness, and it will be flaky, moist and wonderful. If you use a metal spatula to cut thru the fillets or steaks, you can easily slide the spatula under the cooked salmon and lift it out to your serving plates, leaving the cooked skin in the pan and out of site. Whichever is your cooking preference, you won't be disappointed! After a day spent at the lake waterskiing, this was a quick and wonderful dinner to pull together. Happy tummies tonight! I start with caramelizing sweet onions and fresh ginger, and add teriyaki-type flavorings to make a rich yet light, incredibly delicious glaze. The sweet onions and ginger, combined with the other spices and sauces, creates a layered sauce that comes together beautifully. This glaze also works well on chicken breasts, so keep that in mind when you give this a try. This is my honey's favorite recipe for salmon, so if it makes him happy, I'm happy!
In the wintertime I like to make fresh Salmon with Champagne & Chambord Crème Sauce with Fresh Raspberries (which is to die for), but in the summer months when just-caught sockeye salmon is available, this is a wonderful and light variation - especially good when served with fresh raspberries on the side. I hope we can one day travel to the Copper River Lodge in Alaska, and spend lots of time soaking up the scenery and just lazin' in the area that makes sockeye salmon famous. I can just picture the grizzly bears standing in the cold river water, filling their bellies with this wonderful fish. Too bad they don't know about the raspberry balsamic glaze! This is another favorite recipe for fresh salmon, a very unique and honey-sweet recipe with just a hint of maple syrup that is enjoyed by everyone that tries it!
Simple and fast to prepare, you're sure to love it as much as we do. If you're not a fan of pecans {shudder - I can't even imagine that....} you could make this without the pecans - the glaze is wonderful all on its own. This summer lunch treat is healthy and light, filled with sweet apples and grapes, grilled chicken breast, with just a hint of peanut butter. Years ago it won $25,000 in a JIF peanut butter contest.
