Luckily it was only me dropping my freshly made Key Lime Cheesecake. For all my food-blogging friends, at one point or another you have probably had the absolute horror of watching perfection fall out of your hands, sideways on the deck, and there was nothing I could do to stop it. The only other moment that comes close was when I caught our golden retriever paws-up on the counter enjoying a fresh cake I had just finished decorating for a party. I can't believe what a lucky girl I am...two bounces and a herd of folks running to help me out - and I was lucky to save this beautiful cheesecake, without even a single crack - UNBELIEVABLE! And even more unbelievable is how absolutely FABULOUS this creamy and velvety Key Lime Cheesecake is on a long, lot summer night!

Some summer mornings are just better than others!
I make no secret of the fact that we love spending time on decks - whether it is a boat deck, a cabin deck in the woods, or relaxing on the shady deck outside our home, some of our best memories involve time spent together outside. (I could also comment that "decking the halls" is a favorite too, but my kids would groan loudly!) The little ones and I were up at the crack of dawn today, and after glancing at the fresh peaches that were perfectly ripe just waiting for me to do something with them, well, inspiration hit! I make no apologies for all of the peach recipes I've been baking and posting this summer - for whatever reason, each crate we have picked up has been more sweet and wonderful than the last. So today, we are making and loving some Peaches & Cream Buttermilk Pancakes. For Taco Tuesday I decided to try something different! Blackened salmon from Alaska is pretty much the star of the show in these tacos, but when you top them with authentic fresh Avocado Mango Salsa, it adds just the right amount of heat, spice and sweet! I drizzled these with fresh Cilantro Lime Ranch Sauce, and we had the perfect Mexican Fiesta!
When I told the kids that I was grilling up "blackened salmon", you can only imagine the eye-rolling that took place - but this is pretty much the same recipe that I use for my Spice Rubbed Salmon with Mango Salsa - "blackened" is really just a fancy term for cooking something with a heavy spice rub on it. I use this same rub on fish, chicken and beef. It makes a nice little crust on the meat as it cooks. These are the BEST tacos we've ever had - and my family DEVOURED them - not a crumb was left! Oh my - does it get any better than fresh peach pie? I love my Lattice-Topped Fresh Peach Pie, but this brown sugar and pecan crumble topping takes a fresh peach pie to a whole new level!
Fresh butter, brown sugar and pecans melt down into the peach chunks to create one of the most delicious crumble toppings ever - and that is saying a lot! It is absolutely IMPOSSIBLE to not say "Yes!" when one of your little ones asks "If I put on my chef's jacket and we bake some banana and chocolate donuts, will you post my picture helping you?"
Not only does he LOVE helping to measure out all of the ingredients, but he is a great little mixer and decorator - and it is so much fun to bake with him, especially when it is something that he loves so much! These donuts are SO GOOD! No frying involved - the banana and buttermilk batter is baked up fresh in your oven. And the batter is so much like banana bread - but with a cake-donut quality that you will love too! One of my girls LOVES stuffed peppers, and can never get enough of them! Today she learned how to make them on her own, using our family favorite recipe with a lot of quick ingredients we already had in the house. We're lucky that our green peppers are ready to be picked from the garden - and there was a nice selection of colorful bell peppers at the market.
The nice thing about Stuffed Peppers is that you can make them as mild or spicy as you would like! And for those in the house that don't really care for peppers, I usually shape the extra meat mixture into a small loaf pan and bake it in the oven while the Stuffed Peppers are baking. So good with some Spanish Rice! Oh, there is something so summer and relaxing when you sit on a porch and sip on an icy glass of Peach Sweet Tea....it makes me feel so southern and like I'm sitting on a peach plantation!
This is one of my favorite summertime drinks - so easy to make and everyone always loves it! Fresh summer peaches....a little bit of sugar. Magical nectar!

The major difference this year is the raised garden beds and an 8-foot garden fence - it is keeping all of the deer and other garden pests out. In past years we have had to re-plant numerous times - not at all this year!
