Growing up, creamy tomato soup and grilled cheese was one of our favorite dinners on a cold winter night. Years ago I had my first bowl of fire-roasted Tomato Basil Parmesan Bisque, and it was life-changing! Not your sweet, tomato soup from childhood, but a rich and velvety tomato bisque with a touch of cream, topped with homemade garlic butter croutons and freshly grated parmesan just EXPLODING with fire-roasted tomato and basil flavor! With yet ANOTHER snow day today, everyone had a hankering for grilled cheese sandwiches, and what better to go with that than a bowl of homemade Fire-Roasted Tomato Basil Bisque? I tried many different methods to recreate this wonderful soup at home, and finally came up with my version of this that has all of the fresh flavor and silky creaminess that you're looking for. And rather than roasting fresh tomatoes and onions, a little short-cut as well! Once you've had a bowl of this, you'll never look at regular 'ole tomato soup the same way again! Perfect for dunking melty grilled-cheese sandwiches into, but perfectly wonderful all on its own. Of course, Skipper thinks it should be against the law to have tomato soup WITHOUT grilled cheese sandwiches, but he's a guy that also puts sliced pantry pickles INSIDE his grilled cheese sandwiches...one of his family traditions that continues to this day. For a creamier soup, you will blend this in your blender, half-a-blender full at a time - any more than that and you run the risk of the top flying off your blender because of the heat. If you like a chunkier texture, simply use an immersion blender in your soup pan. Either way, it is wonderful on a icy, snowy, freezing night!
