French Onion Dip
I have such memories of my Mom and Dad participating in monthly Dinner of the Month parties while we were growing up. The routine was familiar all over the Midwest - one couple would host four or five couples for appetizers and happy hour drinks, they would then bundle into cars for dinner at a "fancy" restaurant. The evening always ended with dessert and a night cap at another couple's home.
We loved it when Mom had responsibility for the first leg of the evening, because it ALWAYS meant French Onion Dip, served with ruffles potato chips and fresh vegies. Once they left for dinner, the leftover French Onion Dip was fair game for us kids!
This homemade version is so fricking good! The onions cook and caramelized over a two hour period, and are then combined with cream cheese, and sour cream or Greek yogurt, and savory herbs. This is best made the night before you plan on serving, so that the flavors can meld together for the most flavorful French Onion Dip you have ever had!
This is perfect served with your favorite fresh vegies and fresh, ruffled potato chips. This recipe makes two nice serving bowls of deliciousness - and if you are making for a group (even a small one), you'll be surprised at how many people plant themselves around the bowl and never leave until the bowl is empty and fingers licked!
Just another thing to look forward to for Sunday Football parties and tailgating!
HALLOWEEN WITCHES FINGER COOKIES
It's hard to put your finger on what exactly is the best part of Halloween...but these Halloween Witch Finger Cookies are a great place to start! Tender shortbread with the lightest taste of vanilla and almond, and a CRUNCHY fingernail - what could be more fun? Spectacularly spooky, delightfully green - as tasty as they are creepy!
DARK CHOCOLATE CARAMEL BROWNIE COOKIES
It's hard to decide if these are more like a brownie or a cookie! These delicious dark chocolate brownie cookies are stuffed with caramel and dark chocolate chips - about as decadent as you can get!
And because one can never have enough dark fudgy brownie with infused caramel, I double load these with chocolate covered caramels so that there is caramel in every bite!
You can use your favorite chocolate caramel candies for these - but Rolos or bite-size Milky Way Caramel candies seem to hold up the best during the baking process. Once I remove these from the oven, I immediately place another candy on top, to melt into all the nooks and crannies.
If you are a fan of salted caramel, you can also sprinkle a bit of sea salt on top as well. This recipe makes 18 to 20 cookies - and they do a quick disappearing act whenever I turn around!
