I love Easter! Springtime and sunshine...a beautiful morning church service with all of my favorite hymns, and family fun with an Easter egg hunt and delicious brunch - or dinner - or both?
There is always lots of conversation about the way it has to be, and every year we seem to end up with both an Easter Brunch, followed by an Easter Dinner later in the day. Keeps everyone happy, but man oh man, it is a lot of work the day before! This family-favorite ham is so delicious, that I always try to sell it working for both brunch and dinner, but my girls love their egg & cheese quiches, egg & ham strata, French toast casseroles and fresh blueberry strata - what's a Mom to do? At the end of the day, I'm secretly glad that there will be leftover ham for some wonderful ham sandwiches the next day!

There is just something so classic and simple about a homemade fresh Banana Cream Pie! Flaky pie crust, layered with many layers of fresh sliced bananas, homemade vanilla pastry cream, and topped with pillows of fresh sweetened whipped cream - YUM!
And in the midst of winter, this is such a light and "spring-like" treat - perfect on a cloudy, windy day! One of the wonderful things about living in Cleveland is exploring all of the wonderful ethnic restaurants, and experimenting with old-fashioned ethnic foods that are new to our family. For most of our friends and neighbors, there is nothing new or exciting about pierogies - they have been enjoying these during Lent and at other family holidays for generations. But for those of us who have transplanted to the area, discovering pierogies for the first time, and more specifically discovering the absolute deliciousness of HOMEMADE pierogies, is a wonderful treat!
One of my good friends shared her family recipe and the history of pierogies in her family - absolutely had me in awe! Linda hosts periodic pierogie parties - lining up workers in her beautiful kitchen - each one trained for their task, and they pump out 400 of these during an exhausting day of flour, fun and memories. Ahhhhhh....springtime, sunshine and simple things!
It only takes a few little ones around to remind me that it is always about the simple things. Like Honey & Maple Glazed Carrots - I make these all the time for my kiddos, and it is amazing how fast they gobble them up! Come to think of it, the big kiddos eat these like candy too!
