I am always amazed at how fast time flies by! Skipper and I are celebrating another wedding anniversary today - it is hard to believe that it has been twenty-eight years since that magical day and the start of our adventure!
A special day just needs a special dinner - and for tonight we will be celebrating with homemade Lobster Ravioli with Snow Crab Alfredo Sauce and a chilled bottle of champagne. This stuff is seriously dangerous - and so much better than anything you can get in a restaurant.

I've been telling my family that they need to enjoy each and every warm, home-cooked meal during the cold, wet spring we have been having! As soon as the weather breaks, every weekend will be spent on the water, camping or cooking on the deck, and it is a whole different menu!
We LOVE this Chicken Cordon Bleu Casserole - it is a variation of the Chicken Cordon Bleu that we enjoy at Christmas, and a family favorite recipe. This was the perfect day to whip up this favorite - the delicate sauce and aromas wafting about the house while this is baking will drive you out of your mind with longing! My guys do like Breakfast Pizza - especially made with bacon and ham! This recipe is just so simple that you really don't need a recipe, but in the event you are looking for something for a lazy morning breakfast, this is a crowd-pleaser!
The crust is tender Pillsbury refrigerated crescent rolls - after making this about a thousand times, I prefer the Grands Big & Buttery Crest Rolls or Big & Flaky Crescents, but you can also use a Crescent Dough Sheet. With the Grands Crescent rolls you have a little more dough to work with and it really bakes up so tender, buttery and flaky! I'm beginning to think that Winter may never end! For a season that has been incredibly kind to us - we got a surprise winter storm today and expect 4 to 9 inches of heavy snow. Great night for the guys to start the tent-camping season!
Good thing that we have some warm comfort food ready in the oven - they will start their weekend adventure with warm and happy tummies! This spin on baked macaroni and cheese is one of our favorites - super creamy and cheesy, super flavorful and the seasoned Hawaiian bread crumb topping will knock your socks off! Don't let the name fool you - the nacho flavoring is not intense - but everyone notices something delicious about this flavorful cheese sauce - it is very subtle and surprising. |
