I try to use fresh ripe peaches when I make this, but you can substitute frozen peaches if you're in a pinch - they will just be a little bit juicier. I wouldn't use frozen raspberries though, because the fruit will juice up too much - unless you are using raspberries that are flash frozen with no added syrup or sugar.
Perfect ratio of fresh peaches to fresh raspberries - and just the right amount of crispy pecan and oatmeal topping - kinda like a perfect soft and chewy oatmeal & pecan cookie on top!
I usually serve my crisps ON TOP of ice cream. By putting the warm fruit crisp on top, it keeps the golden crisp from getting soggy. You can also top with sweetened whipped cream for a lighter flavor if that is your preference.
And if you're in the mood to try something really crazy, this Peach & Raspberry Crisp is so good on top of Greek yogurt or cottage cheese - a new breakfast craze at our house!
I think I'm going to be very sad to see summer leave this year, taking all of these wonderful fresh peaches, raspberries and other glorious summer fruits with her!
Good thing we've got fall coming at us with a whole new flavor palate and wonderful apples, pumpkin and autumn spices just waiting!
