The directions were simple. He wanted a "North Woods" Birthday Cake...with lots of animals. Wolves, bears, a big Minnesota moose and a tiny red fox. And did I mention LOTS of pine trees? Yup, that's what we were working with!
This is the kind of Birthday Cake that little boys' dreams are made of! Moist, flavorful dark Chocolate Cake covered with a Fudgy Chocolate Buttercream frosting, and topped with White Chocolate Pine Trees and north woods wild animals...could anything be more outdoorsy or delicious?
Three layers of moist, flavorful chocolate cake - staggered and layered to create a mountain of a cake. That was the easy part - this is my "go to" recipe for perfect homemade chocolate cake.
And a basic Fudgy Buttercream Frosting - this is the same recipe that I use for our family-favorite yellow cake. The tricky part was going to be the trees...and then I remembered the white chocolate trees I had made for a Winter cake several years ago. Pretzels would work perfectly for this - and they did! Drizzled with melted white chocolate that we colored with two different shades of green to get that "deep forest" feeling. Aren't they so cute?
Everyone was fighting to eat the trees - so it's a good thing that there were lots of these! Big pretzel rods were sturdy enough for the big pines, and little pretzel sticks made the prettiest little pines you ever did see!
Sprinkles of Oreo cookie crumbs created a forest path of dirt here and there. A little bit of piped green "grass" and a few colorful flowers, and this cake was slowly starting to come to life. Loaded up with all of our little guy's favorite forest animals, and we were ready to start the party!
And everyone was so busy enjoying this cake that they didn't even realize that I forgot the ice cream...
I'm already thinking of ways to create a Christmas holiday cake with these beautiful pine trees! And to Kelsey...you inspire me!
