My family loves Banana Bread Bites – perfect for both special days and everyday munching! With a super-moist texture, buttery banana flavor, and incredibly soft crumb, this is our family-favorite banana bread made extra special with flavorful extras baked up special for the Christmas holidays - all in a sweet little bite size! It's no secret that the Christmas Banana Bread Collection is a family favorite on one of our favorite days of the year! From the time I was a little girl, my Mom would bake classic Banana Bread and special Cherry Chocolate Chip Banana Bread for Christmas morning, filled with chocolate chips, and red and green maraschino cherries. Fresh Banana Date Bread always made an appearance for my Gram as well! She also made a special "Christmas Cinnamon Bread" that was so special that she ONLY baked it for Christmas. CHRISTMAS MORNING MEMORIES...On Christmas morning, we'd cut thick slices of our favorite banana bread and Christmas Cinnamon Bread, warm them up, and spread with butter to melt into every nook and cranny. No wonder we looked forward to Christmas morning so much! With a cup of hot cocoa or coffee, this was the perfect and most relaxing way to start the day! These same recipes can be baked up as Banana Bread Bites, full-sized loaves, regular or mini-muffins, in colorful Christmas liners, and are perfect for individual loaves to add to cookie trays and gift to friends and family. 2 large eggs (room temperature) 2 cups (250g) all-purpose flour (spooned & leveled, not scooped) 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt ½ cup (1 stick) unsalted butter (or margarine), melted 1 cup (200g) granulated sugar 4 medium ripe bananas, mashed (about 1-1/2 cups or 450g) ½ cup milk 1 teaspoon pure vanilla extract SPECIALTY EQUIPMENT: Non-Stick Brownie Bite Pan (12-well Pampered Chef or Wilton) or Muffin Pan (regular size, 12-well) HOW I MAKE THESE:
