My favorite springtime food is deviled eggs. It doesn't use vanilla, but because of the low egg prices around Easter, they are a cheap and delicious snack. My favorite thing to make with vanilla is oatmeal scotchie cookies. They smell great coming out of the oven, plus you can eat mouthfuls of butterscotch chips before you make them!!
