Just when you thought Banana Bread couldn't get any better, Butterscotch Banana Bread comes along and changes your life! Tender, flavorful, super-moist and out-of-this-world wonderful!
And the color....deep caramel, rich butterscotch flavor. It tastes so buttery and rich, but there's not a drop of butter in it! The first time I heard of this butterscotch and banana combination I was just a little bit skeptical, but guys, this is beyond wonderful - a match made in heaven!
A sprinkle of butterscotch chips on top is certainly optional, but believe me when I tell you to JUST DO IT! I made my first batch of this two weeks ago, and I've made it every weekend since! The butterscotch chips add more than a colorful chunk of the top - they add just the lightest extra flavor.
And like I do with so many of my other banana bread recipes (original Banana Bread, Chocolate Chip Banana Bread, Dark Chocolate Raspberry Banana Bread, Strawberry Banana Bread...) I like to glaze the warm loaves with maple syrup after taking them out of the oven. Not only does it create a beautiful glaze, but it seals in all that wonderful moisture and flavor.
The top of this delightful Butterscotch Banana Bread caramelizes and oozes with the most wonderful butterscotch flavor. Truly one of my favorite variations, and a new family favorite! So perfect with a cup of hot coffee on a cold morning. This bread also freezes and travels well.
