WHAT ARE THE BEST WOOD PELLETS TO USE FOR SMOKED HAM?I like to use fruit woods (like cherry or apple) for flavorful smoked ham. Hickory works well too - there really aren't any wrong answers here, so use what you have handy and what's in your pellet box already! MORE TIPS FOR THE BEST RESULTS:INVEST IN A GOOD MEAT THERMOMETER! To have control over how meat is cooking on your smoker, always use a digital or instant-read thermometer to keep an eye on the internal temperature of the meat. Be sure to insert the probe into the thickest part of the meat, opposite the bone and avoiding the fat cap. If the probe is too close to the bone, it will read hotter and can throw off your cooking time. I use and recommend ThermoWorks ONE and ThermoWorks Pop, or if your smoker has an internal digital thermometer probe, even better! WHAT IS THE SECRET FOR THE BEST SMOKED HAM?Like most smoked meats, low and slow is always the way to go! Scoring the ham and smearing with a spicy mustard binder before sprinkling with just the right seasoning is the secret to keeping ham moist and flavorful while it smokes. I also like to add a small amount of ginger ale or apple cider to the bottom of my smoking pan to pull any saltiness out of ham and create flavorful moisture. It's a win-win every time! WHAT MAKES THE BEST SEASONING FOR PULLED HAM?Sugar and spice, and everything nice! Because cured ham is naturally salty, there's no need to add typical barbecue rubs or seasoning. But sprinkle liberally with a Sugar & Spice Seasoning Rub with brown sugar, onion, garlic, black pepper, cinnamon, ginger, mustard, cardamom and cayenne? Now we're talking magic! 1 8-10 lb. bone-in picnic ham (not spiral sliced) ½ cup Zesty Mustard Sauce 1 cup Sugar & Spice Seasoning Rub 1 cup Bourbon Peach Glaze 1 cup ginger ale or apple cider ZESTY MUSTARD BARBECUE SAUCE: 1 cup yellow mustard 1/3 cup honey ¼ cup spicy honey mustard ¼ cup apple cider vinegar 2 Tablespoons ketchup 2 Tablespoons brown sugar (light or dark) 1 Tablespoon Worcestershire sauce 1 teaspoon onion powder 1 teaspoon salt ½ teaspoon black pepper ½ teaspoon cayenne pepper SUGAR & SPICE SEASONING RUB: ¼ cup dark brown sugar 2 teaspoons cracked black pepper 2 teaspoons garlic powder 2 teaspoon onion powder 2 teaspoons ground cinnamon 1 teaspoon ground ginger 1 teaspoon ground mustard ½ teaspoon ground cardamom ½ teaspoon cayenne pepper (add more for an extra flavor kick) BOURBON PEACH GLAZE: 1 cup (213g) brown sugar (light or dark) 1 cup peach preserves ¼ cup pure maple syrup (not pancake syrup!) or orange juice 2 Tablespoons bourbon 1 Tablespoon orange zest 2 teaspoons cinnamon 1 teaspoon ground ginger 1 teaspoon ground nutmeg ½ teaspoon ground cloves SERVE WITH: Additional Bourbon Peach Glaze, Zesty Mustard Barbecue Sauce or Spicy Honey Mustard HOW I MAKE THIS:
