1 15-pound turkey (spatchcocked) Olive oil or melted butter Olive oil spray or avocado oil spray APPLE SPICE TURKEY BRINE: 1/2 gallon (8 cups or 64 oz.) fresh apple cider ½ gallon (8 cups) cold water 1-½ cups kosher salt ½ cup brown sugar (light or dark) ¼ cup Worcestershire sauce 1 Tablespoon fresh black pepper 1 Tablespoon garlic powder 1 Tablespoon onion powder 1 Tablespoon ground cinnamon 1 Tablespoon ground ginger (or candied ginger) 2 sprigs fresh rosemary (or substitute 1 Tablespoon crushed rosemary) 2 sprigs fresh thyme (or substitute 1 Tablespoon crushed thyme) 6-8 sage leaves 10 whole cloves SMOKED TURKEY BARBECUE SWEET RUB: 1/2 cup dark brown sugar ¼ cup coarse kosher salt ¼ cup smoked paprika 2 Tablespoons cracked black pepper 2 Tablespoons garlic powder 2 Tablespoons onion powder 2 teaspoons ground mustard 2 teaspoons crushed rosemary 2 teaspoons crushed thyme 1 teaspoon sage 1 teaspoon celery seed or celery salt 1 teaspoon cayenne pepper CRANBERRY BARBECUE SAUCE: 2 cups (16 oz.)
