Guys...Let me introduce you to a sandwich that is going to rock your world! Meet Barbecue Maple Bourbon Pulled Pork Sliders...sandwich perfection! You'd think that the most perfectly seasoned and spicy barbecued pulled pork would be enough, but we had to take it to the next level! Celebrating both the Kentucky Derby and Cinco de Mayo made for one seriously wonderful food mash-up for us. Start with a fresh artisan sandwich roll, toast it up all golden. Add a couple of Vlassic Stackers Dill Pickles on the bottom - this isn't even optional! Melt a couple slices of provolone cheese, and add a thick layer of tender, melt-in-your-mouth barbecued maple bourbon sauced-up pulled pork. Top with the thinnest slices of red onion, and then it's time for some magic. Drizzle with warm Queso Cheese Sauce. Cover it up all nice and high, wrap your hands around it, and prepare to swoon! Even my kiddos that don't particularly care about dill pickles (in fact, they dislike them greatly) fell in love with these sandwiches, and I may have finally converted them to love dill pickles! The first time I made these, we were loving them with that perfect combination of melted provolone, dill pickle stacker, spicy barbecued pulled pork and delicate red onions, but we were in the middle of partying for the Kentucky Derby, and there just happened to be a bowl of warm Queso Cheese Sauce sitting there. And the rest, as they say, is history. Drizzle some of that warm and spicy melted Queso Cheese Sauce on top, and BAM! Luckily I had slow roasted about 9 pounds of pork shoulder the day before. Sauced up, I refrigerated them overnight and then reheated the next day in time for our party. Don't you just love it when you can prepare stuff ahead of time and then just enjoy the day? It's a good thing that I did make so much barbecued pulled pork, because these were the hit of the party! If you happen to have any Barbecue Maple Bourbon Pulled Pork leftover, it also is pretty fantastic in burritos, topped with melted cheese. Or top some cheesy homemade mac & cheese with a spoonful for the most perfect Piggy Mac ever! Or top a crisp green salad with the pulled pork and drizzle with barbecue sauce for a spiced-up, jacked-up salad. So many ways to love this! And before I forget, I used my vegetable spiralizer to cut the thinnest ribbons of red onion for this - it took all of one minute to have the most perfect, delicate red onion slices ever! Skipper and the kids have already been begging for me to make these again. SO GOOD! Hope that you give these a try soon, and let me know what you think!
