2 tablespoons (28g) fresh lemon juice

1/3 cup (85) grams Instant ClearJel (or cornstarch or quick-cooking tapioca)
1 Tablespoon unsalted butter
1 large egg, room temperature
1 tablespoon water

HOW I MAKE THIS:
YIELD: 1 9-inch pie, two 9-inch pie crusts
