WHAT IS THE SECRET OF STRAWBERRY SUGAR COOKIES?If you’ve ever tried to bake with fresh strawberries, you’ll understand that the high water content of fresh berries tends to make cookies, cakes and breads a bit soggy. Strawberry jam doesn't give you the same burst of flavor or color that you may be looking for in a chewy sugar cookie. Roasting strawberries helps to remove the moisture, retains some of the flavor, but unfortunately creates a brownish berry color - certainly not the bright color we're looking for! My secret? Shortcut freeze-dried strawberry powder to the rescue for a burst of fresh, sweet strawberry flavor! Although the freeze-dried strawberry powder definitely brings the strawberry flavor, the color that it provides is a very light pink at best. For a true strawberry red cookie, I’ve added a bit of red get food coloring to the cookie dough. STRAWBERRY SUGAR COOKIES: 1 cup (2 sticks) unsalted butter (softened) 2 large eggs (room temperature) 3 cups (375g) all-purpose flour 2 Tablespoons cornstarch 2 teaspoons baking powder 1 teaspoon baking soda 2 teaspoons cream of tartar ½ teaspoon salt 1 1/2 cups (300g) granulated sugar 6 Tablespoons (36g) freeze dried strawberry powder 1 teaspoon pure vanilla extract 1 teaspoon pure strawberry extract (Amoretti Artisan Natural Wild Strawberry or Cooks) 1/2 teaspoon red gel food coloring SPARKLING STRAWBERRY SUGAR: 1/2 cup white or red sparkling sugar (sanding sugar) 1 Tablespoon freeze dried strawberry powder HOW I MAKE THESE:

GLUTEN FREE STRAWBERRY SUGAR COOKIES: You can easily make Gluten-Free Crumble Cookies by substituting your favorite 1:1 gluten free flour for the all-purpose flour. I use and recommend King Arthur, Measure for Measure Flour and Bob's Red Mill Gluten Free 1-to-1 Baking Flour. VEGAN STRAWBERRY SUGAR COOKIES: If you use non-dairy butter these could technically be considered vegan cookies, adjust baking time as necessary. Freeze dried fruit powder works. Dried fruit /dehydrated fruit may be too moist.

It says in the instructions to preheat your oven and then later to chill your dough for several hours
