This flavorful pasta is a family favorite – so incredibly fresh and flavorful with tender cheese-filled pasta, fresh tomatoes, fresh basil and cream, and the tangy bite of the sun-dried tomatoes. Who knew that something so easy to make could be so rich and divine? Perfect for a special romantic dinner, but fast enough to feed a hungry family too! This is a classic recipes that you should master and have in your repertoire - everyone is impressed with both the recipe and the results! We'll never tell them just how easy it is! We have bumper crops of roma tomatoes this year, and I'm always looking for a way to incorporate their vine-ripened freshness and sweet taste into meals. If you aren't able to make homemade roma tomato puree, you can also substitute canned tomato puree. I add finely minced sun-dried tomatoes to the sauce - they add just a blast of wild tomato taste, and another level of texture to the creamy sauce. Rich cream and freshly grated Parmesan cheese add silky richness and wonderful flavor. For this recipe make sure that you use fresh basil - either from your garden or the market. You can't believe how much flavor the fresh basil adds to this! Our little ones love this, but it is also perfect for a romantic dinner for two. A fresh salad, some warm bread, a glass of your favorite wine, and dinner is served! Hope that you enjoy this family favorite as much as we do!
