This is my honey's favorite recipe for salmon, so if it makes him happy, I'm happy! In the wintertime I like to make fresh Salmon with Champagne & Chambord Crème Sauce with Fresh Raspberries (which is to die for), but in the summer months when just-caught sockeye salmon is available, this is a wonderful and light variation - especially good when served with fresh raspberries on the side. I hope we can one day travel to the Copper River Lodge in Alaska, and spend lots of time soaking up the scenery and just lazin' in the area that makes sockeye salmon famous. I can just picture the grizzly bears standing in the cold river water, filling their bellies with this wonderful fish. Too bad they don't know about the raspberry balsamic glaze!
