I use and recommend King Arthur, Measure for Measure Flour and Bob's Red Mill Gluten Free 1-to-1 Baking Flour.
FRESH FRUIT OR FROZEN FRUIT? WHICH IS BETTER?
I prefer using fresh fruit for my crumble bars - whether its blueberries, raspberries, strawberry, rhubarb, peach or cranberry, but in a pinch (or in the middle of winter) you can also use frozen berries. Simply use them frozen (don't thaw before baking) and increase the baking time.

1-½ cups (188g) all-purpose flour

½ cup (100g) packed light or dark brown sugar
1 teaspoon baking powder
½ teaspoon pure vanilla extract
½ teaspoon ground cinnamon
1/8 teaspoon salt
BLUEBERRY & RHUBARB LAYER:
2-1/4 cups (350g) fresh blueberries
2 cups sliced rhubarb
½ cup (100g) granulated sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
2 teaspoons lemon zest
2 tablespoons old fashioned oats
1/3 cup sliced almonds or chopped pecans (optional)
