We have been so lucky to have a bumper-crop of raspberries and rhubarb this year! We have a variety of different raspberry bushes along one entire side of the house, and the kids love going out to gather berries - and eat handfuls as well!
Rhubarb-Raspberry Crisp, Rhubarb-Raspberry Pie, Raspberry Jam...the list goes on and on of our favorites, but one of the very best is these delicious Raspberry Crumb Bars!
There is nothing quite like an old-fashioned fresh raspberry bar - all crumbly with butter, brown sugar and oatmeal.
Other recipes typically use only a jam filling, but I like to add fresh raspberries to the mix. I cook the berries and jam on the stove until the berries are broken up slightly, and then cool down to room temperature before adding to these tender bars.
You can top these with a scoop of vanilla bean ice cream, but I prefer serving and eating them all by themselves...garnished with some fresh berries on the side.
