 Blueberry Buckle This time of the year it is just about impossible to walk thru the produce department or market without seeing something so perfect that you have to pick it up! I try to make a grocery list and shop only once a week, using coupons and specials to make meals stretch just a little bit farther with our big family. But when I see fresh blueberries - big, beautiful, juicy BLUE blueberries, it is hard to resist! So when I brought home a beautiful container with eight cups of fresh and beautiful blueberries, the kids were immediately asking what I planned to make....blueberry muffins, fresh blueberry pie, some tender blueberry pancakes, or could they just have a few handfuls of fresh berries to munch on?  Blueberry Buckle This Blueberry Buckle is fabulous all on its own - bursting with four cups of fresh blueberries - but the streusel topping is TO DIE FOR! The delicate crumble is buttery, crispy on the top, and chewy tender. I think if there was a way to make just the crumble, it might be worth a try, the way that everyone was picking away at it!
