Kerrygold butter, Guinness stout, Kerrygold Dubliner Cheese (very similar to cheddar cheese - only better!), Kerrygold Swiss Cheese, thick chunks of leftover Corned Beef with Apricot Dijon Glaze or Corned Beef with Blackberry Dijon Glaze, and crispy bacon combine into the ultimate comfort food.

16 ounces (4 cups) elbow macaroni
6 tablespoons butter
6 tablespoons flour
3 cups whole milk
¼ cup stone ground mustard
12 oz. Guinness or other stout beer
8 oz. cream cheese
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon nutmeg
1 teaspoon ground black pepper
½ teaspoon kosher salt
2 cups shredded Kerrygold Dubliner Cheese
2 cups shredded Kerrygold Swiss Cheese
8-12 ounces corned beef, sliced thick & chopped
4 ounces bacon, cooked and chopped
¼ cup chives or chopped parsley (optional)
