Oh my goodness. It's time to buckle up your seatbelt and get ready for the best grilled cheese sandwich you will ever have in your life! Gruyere French Onion Grilled Cheese with Thyme Butter are going to become your new favorite! The first time I made these, I made the mistake of only making only two perfectly golden, melted sandwiches. There were only a few of us at home, and not everyone is a fan of Gruyere cheese or caramelized onions. I cut the two into halves, and four of us circled the island to taste test these golden melted beauties, warm from the pan. Skipper took one bite, and immediately mumbled "MAKE MORE..." Two secrets to these sandwiches. First, Fresh Thyme Butter. If you've never had this before, it is going to rock your world. Perfect for grilling these sandwiches, but also pretty darn wonderful on warm biscuits or fresh hearty bread. Or place a scoop of these savory compound butter on top of a hot steak when you take it off of the grill. MIND-BLOWING! And what can we say about caramelized onions (or "French Onions"). Cooked low and slow in a heavy skillet, these take about 40-45 minutes to caramelize perfectly. They are absolute perfection in these sandwiches, but also fabulous on top of a grilled burger or steak. I didn't think anyone would want to wait while I caramelized a whole new recipe, but I was wrong. They came running even faster this time! Don't stop - you will want to make a batch of these right now. Make lots - your family and friends will think you are a cooking goddess!
