The sweet & salty pretzel pie crust is unique, and pre- baked for a few minutes to add a toasty caramelized flavor that you’ll be craving. If you prefer, you can substitute a graham cracker crust or flaky buttery pie crust. Top with a scoop of creamy vanilla ice cream or sweetened whipped cream for an easy and delicious summertime pie!

Fresh Strawberry Pie

INGREDIENTS:
1-1/2 cups (170g) pretzel crumbs
8 tablespoons (112g) unsalted butter (melted
1/3 cup (67g) granulated sugar
2 pounds fresh strawberries
¾ cup (150g) granulated sugar
1/3 cup boiling water
3 tablespoons cornstarch
1 teaspoon pure vanilla extract
 
HOW I MAKE THIS:

1. PREPARE PRETZEL PIE CRUST: For this pie we’ll be using a single pie crust on the bottom of a 9x2-inch dish glass pie plate or springform pan.
2. In a medium bowl, mix together the pretzel crumbs, melted butter and sugar. The mixture should be damp, like wet sand and will hod together if you squeeze it together with your fingers. If it’s too dry, add a tablespoon more melted butter; if too wet, add a tablespoon more of pretzel crumbs until you reach the perfect consistency.
3. Pour the crumb mixture into a pie plate and start pressing up the sides of the  pie plate to form the edges first. Once you’ve formed the edges, work the crumbs down to evenly spread them into the bottom of the pie plate. Press it down firmly with your fingers, and then pack it down using a flat-bottomed measuring cup.
4. BAKE CRUST: Preheat oven to 350°F and bake for 10 minutes. This extra step helps keep your crust sturdy and adds a caramelized flavor – well worth your time!
5. PREPARE STRAWBERRY GLAZE: Pulse 1-1/2 cups of the fresh strawberries in a blender or food processor. Add the sugar, boiling water and cornstarch and blend until smooth.
6. Pour strawberry mixture into a medium saucepan and bring to a boil over medium heat, stirring constantly. Once mixture starts to boil, continue to boil for 3 minutes, stirring constantly. The mixture will be very thick and cloudy, but will become clearer and more like jam as it cooks. Remove from heat, and stir in the vanilla extract. Allow the glaze to cool to room temperature.
7. Cut the remaining strawberries into assorted sizes – keep small berries whole, and cut larger berries into chunks, and place in a large bowl.
8. Pour the cooled strawberry glaze on top and stir gently until all the strawberries are evenly coated. Pour strawberry mixture into prepared crust. 
9. Chill pie for at least 2 hours, or until the glaze has set and thickened.
10. Keep pie chilled until reach to serve. Fresh Strawberry Pie is best served the same day it is made. Cover and store leftovers in the refrigerator for up to 3 days.
11. Optional: Serve with a scoop of vanilla ice cream or dollop of sweetened whipped cream.
