This cold Buffalo Chicken Dip is an easy, no fuss appetizer that’s great for football parties or game-day festivities. Tender shredded chicken breast is combined with cream cheese, sour cream, crunchy bits of celery, lots of spices and plenty of hot sauce to make the perfect cool version of Buffalo Chicken Dip to serve with fresh vegies and crackers, or spread on tortillas for FABULOUS Buffalo Chicken Wraps or pinwheels! Some recipes come about by accident - and this is one of those happy outcomes! Everyone, and I mean EVERYONE, loves traditional Buffalo Chicken Dip. Warm from the oven and served with tortilla chips, it is a proverbial game day requirement. There are a million recipes out there, but nothing quite as simple and good as this COLD Buffalo Chicken Dip version! Loaded with spices, perfectly creamy, with tender bites of chicken and crispy celery, it's the perfect cold dip to serve with fresh vegies, crackers, or pretzels. It's also pretty fantastic spread on a fresh tortilla shell and served as Buffalo Chicken Wraps, or sliced up and served as Buffalo Chicken Pinwheels for an appetizer. INGREDIENTS:
2 cups cooked, shredded chicken (I recommend rotisserie chicken) 8 oz. cream cheese (softened to room temp) 1-1/2 tablespoons Hidden Valley Spicy Ranch Salad Dressing & Seasoning Mix (dry seasoning mix or substitute ½ cup prepared ranch dressing) 1 cup sour cream 1/4 cup Frank’s Original Hot Sauce ½ teaspoon smoked paprika ½ teaspoon chili powder ½ teaspoon cumin ½ teaspoon garlic powder ½ teaspoon onion powder salt to taste 1 cup finely diced celery ¼ cup Blue cheese crumbles (up to 1/2 cup if you LOVE blue cheese) 1-1/2 cups freshly grated sharp cheddar cheese Garnish (optional)
SERVE WITH: Fresh Vegetable dippers, chips, or crackers. HOW I MAKE THIS:
