My family loves Banana Bread – and one of our newest obsessions is Caramel Apple Banana Bread! With a super-moist texture, buttery caramel and banana flavor, tender bits of cinnamon & sugar apple pieces, an incredibly soft crumb, and topped with a silky Cream Cheese Caramel Frosting, this is banana bread perfection! For a sweet twist, substitute salted caramel sauce for the caramel sauce – SO GOOD! APPLE SECRETS?Use your favorite baking apples for this recipe. I typically use one granny smith and one honeycrisp apple for great baked apple flavor! If you use apples that are too soft, they will dissolve and bake away, so be sure to use fresh, crisp baking apples for this recipe. As with most add-ins for breads, muffins and cakes, if you simply add apple chunks to the batter, they will sink to the bottom of your bread as it bakes. WOMP WOMP! To prevent this, we coat the apple pieces with cinnamon sugar before adding to the batter. With this technique, you'll be guaranteed tender apple bits in every tender bite of Caramel Apple Bread! TO GLAZE OR NOT TO GLAZE...It's always a struggle to decide whether to glaze banana bread, but for this special Caramel Apple Banana Bread, I went with a nice and silky Cream Cheese Caramel Frosting. Let's be clear, this banana bread does NOT need this frosting. Loaded with bananas and tender apple pieces, its definitely moist and sweet enough on its own. For special occasions, Cream Cheese Caramel Frosting makes this moist Caramel Apple Banana Bread even MORE special! For a simpler version, you can simply brush warm maple syrup on top of the bread when you remove it from the oven. This will seal in the moisture and give you a delightful light topping. Both the Cream Cheese Caramel Frosting or maple syrup glaze freeze well - just be sure to allow it to harden before freezing. This is a great way to prepare ahead of time for lazy and special breakfasts or gift-giving.

1 cup diced apples (I use 1 granny smith & 1 honeycrisp) 1 tablespoon cinnamon 3 tablespoons sugar 2 cups (250g) all-purpose flour (spooned & leveled, not scooped) 1 teaspoon baking soda ½ teaspoon salt ½ cup (1 stick) unsalted butter (room temperature) 1 cup (200g) granulated sugar 4 medium ripe bananas, mashed (about 1-1/2 cups or 450g) 2 large eggs (room temperature) ½ cup milk or half & half 1 teaspoon pure vanilla extract 1/3 cup caramel sauce CREAM CHEESE CARAMEL FROSTING: 4 oz cream cheese (softened) 3 cups powdered sugar 1 teaspoon vanilla extract 2-4 tablespoons caramel sauce HOW I MAKE THIS:
