So who ever dreamed that we'd be enjoying a February weekend with sunshine and 70 degree temps? My hubby just looked at me in horror when I asked him if we could get just a FEW pieces of our patio set out from storage for the weekend...but can you ever remember such wonderful weather this early in the year? It's time to celebrate!

And these Brown Sugar Bacon & Brie Sweet Potato Fries are the perfect appetizer for enjoying a winter weekend on the deck! The perfect little snack - sweet, salty, spicy and with just a little bit of kick!

Brown Sugar Bacon & Brie Sweet Potato Fries

A quick look in the fridge, freezer and pantry, and we are good to go on this one!

Caramelized bacon - need I say more? Simply dip both sides of your bacon into a mixture of brown sugar, smoked paprika, dried mustard and spicy cayenne pepper. Bake for just a few minutes until the bacon is crisp and the sugar has caramelized. You may want to go ahead and double this up, and it did tend to mysteriously disappear from the counter while it was cooling down! Perfect not only for this recipe, but also good crumbled on top of a salad!

These are perfect for game day, but also something that is pretty darn delicious with a glass of wine!

I use all natural Alexia Waffle Cut Sweet Potato Seasoned Fries, which are savory, thick and warm, and have the just right amount of crunch and tender potato.

Even my kiddos that don't care for sweet potatoes LOVE these!

BROWN SUGAR BACON & BRIE SWEET POTATO FRIES

This little appetizer is the perfect snack – Brown Sugar Bacon & Brie Sweet Potato Fries are tantalizing, sweet, salty, spicy with just a little bit of kick! They disappear as fast as I pull them out of the oven!

Brown Sugar Bacon & Brie Sweet Potato Fries

INGREDIENTS:
1 pkg (20 oz.) Alexia Waffle Cut Sweet Potato Seasoned Fries
6 slices hickory smoked bacon
6 Tablespoons brown sugar
1 teaspoon smoked paprika
1 teaspoon dried mustard
½ teaspoon cayenne pepper
8 oz. brie
Fresh parsley, for garnish

HOW I MAKE THIS:

Preheat oven to 400 degrees. Cover a large baking sheet with foil. Place a cooking rack on top of a baking sheet and spray with non-stick spray.
In a small bowl, mix together with brown sugar, smoked paprika, mustard and cayenne pepper with a fork. Pour onto a plate. Coat both sides of each piece of bacon with the sugar mixture, and place on top of the baking rack. Save remaining brown sugar mixture for later.
Bake for 10-14 minutes or until bacon is crisp and sugar mixture has caramelized. Remove from oven, and immediately remove bacon from rack and place on parchment paper or foil to cool slightly. If you don’t remove the bacon from the rack right away, it will stick in about a hundred places and be impossible to remove!
Increase oven temp to 425 degrees and bake the waffle sweet potato fries for about 24 minutes or until crisp.
While potatoes are baking, chop up the caramelized bacon. Cut brie cheese into medium-sized pieces (you can remove the rind if you want to, but you don’t need to).
Remove baked sweet potatoes from oven and decrease oven temp to 350 degrees.
Sprinkle baked sweet potatoes with chopped caramelized bacon and pieces of brie; sprinkle remaining sugar mixture evenly on top.
Return to oven and bake for 5 to 6 minutes, or until brie is gooey and melted.
Remove from oven, and sprinkle with chopped parsley. Serve immediately.

YIELD: 6 to 8 servings
