One of our favorite cocktails to kick off the new year is a Rosemary Greyhound Cocktail...and I promised to share the recipe again! Fresh grapefruit juice, grapefruit vodka, a squeeze of fresh lime juice and the most glorious Rosemary Simple Syrup are shaken together and then poured over ice. Garnished with a slice of juicy pink grapefruit and a sprig of rosemary, these are almost too pretty to drink! These are also perfect for springtime and bridal showers. Pretty AND pink! ROSEMARY SIMPLE SYRUP IS THE SECRET...For this incredible cocktail, Rosemary Simple Syrup is the secret ingredient - and it's so easy to make! You simply combine sugar and water in a saucepan and stir over medium-low heat until the sugar dissolves. Pour the warm mixture over fresh rosemary sprigs and let it steep for an hour - just like tea! Not only is the fragrance divine, but it takes this signature drink over the top! Who knew that a sweet and savory syrup could make such a major difference in a cocktail? And everyone just loves twirling the drinks with a sprig of fresh rosemary. INGREDIENTS:
ROSEMARY SIMPLE SYRUP: 2 cups sugar 2 cups water 6 sprigs fresh rosemary ROSEMARY GREYHOUND COCKTAILS: 1 cup crushed ice or ice cubes 2 oz. vodka or grapefruit vodka 4 ounces fresh grapefruit juice ½ ounce Rosemary Simple Syrup Splash of fresh lime juice Garnish: sprigs of fresh rosemary and slices of fresh pink grapefruit HOW I MAKE THESE: 1. MAKE ROSEMARY SIMPLE SYRUP: In a medium saucepan over medium-low heat, combine the sugar and water. Stir or whisk until the sugar dissolves, continue stirring until sugar is complete dissolved. Do not bring above a low simmer – if you boil the mixture sugar crystals will form. 2. Remove from heat and pour warm mixture over fresh rosemary sprigs and let it steep for at least 1 hour. 3. Store in sealed container in the fridge for up to 2 weeks. Makes ½ cup syrup. 4. COCKTAILS: Fill glass with crushed ice or ice cubes; add vodka, fresh grapefruit juice, rosemary simple syrup and a splash of fresh lime juice; stir gently. 5. Garnish with a sprig of fresh rosemary and a slice of fresh grapefruit and enjoy! YIELD: about 2 cups Rosemary Simple Syrup NOTES: For something special and different, you can place a small piece of fresh rosemary in water before freezing it into pretty and fancy ice cubes.
