If you love soft and chewy cookies, you are going to ADORE these peanut-buttery Monster Cookies! These are chewy and thick bakery-style cookies that you will fall in love with, bite after bite! Loaded with peanut butter, oats, chocolate chips and colorful M&M’s, these taste even more wonderful than they look!! WHY SOFTEN BUTTER?For the best texture, most cakes and cookies call for butter to be at room temperature or softened. Room temperature butter is actually cool to the touch, not warm. When you press it with your finger, your finger will make an indent, but shouldn't sink down into the butter. To get that perfect consistency and temperature, remove butter from the fridge about 30 minutes prior to beginning your recipe. To soften butter quickly, cut butter into cubes on a plate and let sit at room temperature for 10 minutes. You can also run a large glass bowl under hot water - place it over the cubed butter and let sit for 5 minutes. WHY USE EGGS AT ROOM TEMPERATURE?Most cake and cookie recipes call for eggs to be at room temperature, which allows them to be incorporated more easily into recipes. To bring eggs to room temperature, set eggs on the counter for 30 minutes. To warm up more quickly, fill a bowl with warm water, add the eggs and let sit for 5 minutes. Remember to use LARGE eggs as well! And remember to add each egg separately and mix well before adding the next egg!
INGREDIENTS:
2 large eggs (room temperature) 1/2 cup (1 stick) salted butter (softened) 1 cup (270g) creamy peanut butter 1/2 cup (100g) granulated sugar 1/2 cup (100g) brown sugar 2 teaspoons vanilla extract 1 cup (125g) all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/8 teaspoon ground cinnamon 2 cups (160g) old fashioned oats 1 cup semi-sweet chocolate chips (divided) 1 cup M&M's (divided) HOW I MAKE THESE:
YIELD: 20 cookies NOTES: These freeze well for up to 2 months – simply layer in single layers on parchment paper – I usually use the same parchment paper that these baked on – simply cut to the size of your container and load it up! © SnowflakesandCoffeecakes.
