What is the only thing better than Ultimate Rice Krispies Treats? Lucky Charms Ultimate Marshmallow Bars are magically delicious! Let’s face it – those tiny, colorful marshmallows are simply the BEST! These bakery-style bars are thick, soft and gooey with extra marshmallows in every bite – the Ultimate Marshmallow Treat! My little leprechauns go crazy for these!

These really are magical marshmallow bars! Unlike other treats, they will stay super fresh, soft and chewy for a week if you keep them in an airtight container at room temperature.

You can also get crazy creative and substitute Rice Krispies, Cocoa Krispies, or Fruit Loops for the Lucky Charms. Early in the year, you may also find Cocoa Rice Krispies that are made especially for St. Patrick's Day and leprechaun traps - chocolate cereal with special marshmallows made especially for St. Patrick's Day. My little ones LOVE these in any shape or form!

These are a simple treat to make for St. Patrick's Day celebrations at school or at home. You can cut them up and wrap them individually in plastic wrap so they are party-ready and waiting.

Let's face it, we all have a favorite cereal from our childhood! Your little leprechauns will love these too - and your big leprechauns as well!

Lucky Charms Ultimate Marshmallow Bars

INGREDIENTS:
10 tablespoons unsalted butter
20 cups mini marshmallows (divided)
1 teaspoon pure vanilla extract
½ teaspoon kosher salt
12 cups Lucky Charms cereal

HOW I MAKE THESE:

Line a 9x13-inch pan with parchment paper or foil (with overhang on all sides of pan); spray with non-stick cooking spray; set aside.
In a large non-stick stockpot or Dutch oven, melt the butter and 16 cups (680g) of mini marshmallows over low heat, stirring occasionally, just until the marshmallows are melted. Remove pan from heat. Stir in the vanilla extract and salt.
With a wooden spoon, stir in the Lucky Charms cereal and mix until the cereal is evenly coated.
With a wooden spoon, stir in the remaining 4 cups mini marshmallows.
Pour the mixture into the prepared pan as evenly as you can. Spray the bottom of a large spatula with non-stick spray and press the mixture firmly into an even layer. Optional: gently press additional Lucky Charms marshmallows on top of bars.
Keep at room temperature for an hour. Using the edges of the parchment paper or foil, pullup and remove the treats from the pan.
Spray a large knife with non-stick cooking spray and cut treats into 24 large squares.
Store in an airtight container at room temperature, or wrap individually in plastic wrap for easy serving.

YIELD: 24 bars

NOTES:

You will need 3-1/2 (10 oz.) bags of mini marshmallows for this recipe.
You can prepare this in your microwave if you have a large microwave and a VERY large microwave-safe bowl – keeping in mind that the marshmallows will puff up a LOT! Cook at half power in one-minute increments, stirring between each minute, until the marshmallows are puffed and melted evenly.
You can eliminate the extra four cups of extra marshmallows that are added in at the end, with no other changes made to the recipe.
You can substitute marshmallow cream – substitute four (7.5 oz.) jars of marshmallow cream for the 16 cups of mini marshmallows. Add the marshmallow cream to the melted butter over low heat and proceed with the recipe.
You really do need a wooden spoon for this recipe – the mixture is pretty thick and heavy and will snap plastic spoons or spatulas.
