For gourmet brownies, in addition to using premium chocolate and cocoa, only the best ingredients will give you the texture, richness and depth of flavor we all crave. Make sure to use fresh ingredients for the best results! I’ve made so many cakes, cookies and brownies through the years, and these are my recommendations:
DARK CHOCOLATE BROWNIES:
4 large eggs (room temperature)
3 ounces (85g) unsweetened baking chocolate
1 cup (170g) 60% cacao bittersweet chocolate chips (Ghirardelli 60% Cacao Bittersweet Chocolate Chips or Guittard Extra Dark Chocolate Baking Chips)
1 cup (8 ounces or 2 sticks) unsalted butter
1 cup (200g) granulated sugar
1 cup (213g) light brown sugar
1 cup (125g) King Arthur All-Purpose Flour
½ teaspoon baking powder
1 teaspoon salt
½ Tablespoon espresso powder
2 teaspoons pure vanilla extract
1 cup (170g) semisweet chocolate chips
CHOCOLATE FRENCH SILK FILLING:
¼ cup (4 tablespoons) unsalted butter
1 cup (200g) granulated sugar
¼ cup evaporated milk
1-½ cups (7 ounces) marshmallow crème
½ cup (3 ounces) 60% cacao bittersweet chocolate chips (Ghirardelli Bittersweet)
½ teaspoon kosher salt
1 teaspoon pure vanilla extract
1 teaspoon pure chocolate extract (Cooks or Rodelle)
2 tablespoons unsalted butter
2 teaspoons light corn syrup
½ cup semisweet chocolate chips
2 teaspoons HOT water
24 Dove Promises Dark Chocolate Hearts or
Godiva Masterpiece Dark Chocolate Hearts
HOW I MAKE THESE:
YIELD: 24 brownies, or 12 individual brownies.
