Oh, how we love fresh Key Lime Curd and its sister, Fresh Lemon Curd! You can buy expensive jars of this in the gourmet section of your local market, but it is just so dang easy to make a batch of fresh at home! Fresh Key Lime Curd is super rich, creamy and buttery. It is slightly thicker and packs a more intense lime-infused sweet & tart "punch" than key lime pie filling or the filling in Fresh Key Lime Bars. This is perfect for filling shortbread cookies - top with a fresh raspberry for a beautiful and special little cookie. We also like this drizzled on warm buttermilk pancakes, and it is perfect with fresh blueberries in crepes. The rich and creamy taste is also perfect for filling a Key Lime Cake, or cut out a core from your favorite Key Lime Cupcakes and add a dollop of this for a secret surprises in the cupcake.
