Creamy Tuscan Chicken is one of my family’s favorite chicken dishes – every time that I make it they exclaim that it is better than ANYTHING you can get at a restaurant! This looks and tastes gourmet, but easily made in one skillet in about 30 minutes. Chicken cutlets are lightly seasoned, cooked until golden, and then nestled in a creamy and flavorful Parmesan cream sauce spiked with sun-dried tomatoes. For an even faster meal, substitute warm rotisserie chicken for the chicken cutlets and simply top with the Tuscan Cream Sauce. You’ll be licking your plate!
HOW DO I MAKE CHICKEN FILLETS OR CUTLETS?

2 large chicken breasts
3 tablespoons flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon paprika
½ teaspoon pepper
2 Tablespoons unsalted butter
2 Tablespoons olive oil
TUSCAN CREAM SAUCE:
1 Tablespoon unsalted butter
1 Tablespoon oil from sun-dried tomatoes
1/2 cup sun-dried tomatoes (drained & chopped)
1 shallot (minced)
4 garlic cloves (minced)
1/2 teaspoon red pepper flakes
1 1/2 cups chicken broth
¼ cup flour
1 cup heavy cream
1 teaspoon dried parsley (or 1 Tablespoon fresh)
1 teaspoon dried basil (or 1 Tablespoon fresh)
½ teaspoon dried oregano
1 cup finely shredded fresh Parmesan cheese
Salt & Pepper to taste
1 pint cherry tomatoes (halved)
2 cups baby spinach (optional)
