Classic Chicken Salad Wraps

Fabulous and fresh Classic Chicken Salad with Grapes is ALWAYS a huge hit - whether you put this in a tortilla wrap or sandwich, scoop it onto crisp green garden greens, or serve in pretty little finger sandwiches for garden teas, baby or bridal showers. 

Chicken Salad Wraps have always been a favorite - served whole in a fresh herb tortilla or sliced up and served as appetizers.  SO GOOD!

Classic Chicken Salad with Grapes Wraps

CLASSIC CHICKEN SALAD SERVING SUGGESTIONS:

• Chicken Salad Wraps (with Provolone Cheese Slices, Tomato & Romaine Lettuce)
• Chicken Salad Appetizers – cut wrap sandwiches into 1” slices to serve as appetizers
• Chicken Salad Croissants or Mini-Croissants
• Classic Chicken Salad with Grapes on Slider Rolls
• Classic Chicken Salad Sandwiches – serve on thick slices of homestyle bread
• Chicken Salad Lettuce Cups – serve in freshly washed Bibb Lettuce
• Classic Chicken Salad with Grapes served on Salad Greens
• Picnic Chicken Salad Wraps – keep tightly wrapped in plastic wrap, chilled in a cooler with ice until ready to serve.

CLASSIC CHICKEN SALAD RECIPE VARIATIONS:

• For super fresh and moist chicken, I replace the rotisserie chicken with 3 freshly poached boneless skinless breasts - the meat is super tender when it’s cooked this way.  In a non-stick frypan, cover the chicken breasts in a few inches of cold water, and bring to a simmer over medium heat.  Simmer for 5 minutes, then turn off the heat, cover, and let sit for 20 minutes. Remove the chicken and refrigerate until chilled. Then chop. You’ll get moist chicken that cuts in perfectly clean cubes!
• For a lightened up version, replace the mayonnaise with Greek Yogurt.
• For all my northern friends that prefer Miracle Whip – yes, you can replace the mayonnaise with Miracle Whip. 
• Autumn Apple Chicken Salad - For a delicious fall twist, replace the grapes with chopped apples – but keep the dried cranberries for flavor and color!
• Poppy Seed Chicken Salad – add 1 tablespoon stone ground mustard, 1 tablespoon fresh lemon juice and 2 tablespoons to poppy seeds to the dressing.

Classic Chicken Salad Wraps

INGREDIENTS:
Dressing:
1 cup mayonnaise  (NOT Miracle Whip)
1 Tablespoon sugar
½ teaspoon salt
½ teaspoon ground black pepper
 
Classic Chicken Salad:
4 cups shredded or diced rotisserie chicken
1 cup finely diced celery
1 cup red seedless grapes (cut in halves)
½ cup dried cranberries
¼ cup finely diced red onion
½ cup roasted pecans (chopped) or slivered almonds (optional)
 
WRAP INGREDIENTS:
Classic Chicken Salad with Grapes
6 Sun Dried Tomato Basil Wraps or Garden Spinach Herb Wraps  (I use Mission brand)
6 slices of Provolone Cheese
Fresh spinach or romaine lettuce
 
TO MAKE CLASSIC CHICKEN SALAD WITH GRAPES:

1. Add Dressing ingredients in a large bowl and stir until well blended.
2. Add chopped chicken, celery, grapes, cranberries, red onions and pecans or almonds (nuts are optional).
3. Stir together just until combined.
4. Cover and refrigerate until ready to serve.  Best served same day! 

 
HOW I MAKE CHICKEN SALAD WITH GRAPES WRAPS:

1. Spread 3/4 to 1 cup Classic Chicken Salad Filling in center of each wrap.
2. Add a slice of provolone cheese on top of the chicken salad.
3. Layer fresh spinach or romaine leaves on top.
4. Gently roll up the tortilla wrap as tight as you can.  Wrap tightly in plastic wrap and refrigerate until time to serve.
5. When ready to serve, remove plastic wrap.  For individual wraps, cut each wrap in half and service.
6. For appetizers, Insert toothpicks evenly about an inch apart from each other along the length of the rollup.  Using a serrated knife, cut into 1 or 1-1/2-inch pieces.
7. Push the toothpick all the way thru the wrap keep it from unraveling. 
8. Serve and enjoy!

 
YIELD:  6 individual wrap sandwiches or 36 appetizers
