Chicken Wild Rice Casserole is the perfect comfort food – warm and hearty, rich and creamy! Packed with tender chunks of chicken, a nutty wild rice blend, caramelized onions and earthy mushrooms, and fresh vegetables, it is covered in a velvety and rich creamy cheese sauce and topped with a buttery crumb topping – a family favorite that is filled with hearty flavors and textures, and oh-so satisfying! Easy to make ahead of time or frozen for later, this flavorful casserole is perfect for weeknight dinners, potluck suppers or as a wonderful casserole to drop off for a friend WHAT IS THE BEST RICE TO USE FOR THIS CASSEROLE?For this recipe look for a wild rice BLEND and not 100% wild rice. Wild rice blends are a mixture of rice varieties, and will give you the best flavor and texture in this casserole. Cooked al dente, wild rice blend has a toasted, nutty flavor and chewy texture, perfect when paired with the earthy mushrooms, onions and other fresh vegetables. Being a Minnesota girl, I'll always tell you that Minnesota wild rice blends are the best if you can find them! You can also use pre-packaged wild rice blends that are usually available at quality grocery stores. Lundberg Wild Rice Blend is a mixture of wild rice, long grain brown rice, sweet brown rice, whole grain wehani rice and whole grain blank japoanica rice. In a pinch I've also used Uncle Ben's Long Grain & Wild Rice Blend. If your wild rice package comes with a seasoning packet, discard for this recipe. Don't make the mistake of using instant wild rice, brown rice or white rice, which are easily overcooked and turn mushy. IS WILD RICE GOOD FOR YOU?Wild rice is highly nutritious - it contains more protein and less calories than other types of rice, is a good source of fiber, boasts a variety of vitamins and minerals, and is rich in antioxidants. It is also low in fat and gluten-free, making it a healthy option for people with dietary restrictions. Additionally, wild rice has a lower glycemic index than white rice, which means it can help regulate blood sugar levels. If you are trying to eat healthier, this is good to know! RECIPE VARIATIONS:
CAN I MAKE GLUTEN-FREE CHICKEN & WILD RICE CASSEROLE?Absolutely! To prepare this as a gluten-free casserole, use your favorite gluten-free flour in the roux, gluten-free Worcestershire sauce and make sure that your Dijon is gluten-free.
INGREDIENTS:
1-1/2 cups uncooked Wild Rice Blend 1 1/2 lbs. chicken breasts (cut into large bite size pieces) ½ teaspoon salt ½ teaspoon pepper ½ teaspoon smoked paprika 2 Tablespoons olive oil 2 Tablespoons unsalted butter 1 large yellow onion or sweet onion (diced) 3 stalks celery (chopped) 3 large carrots (peeled & chopped) 3 cloves garlic (minced) 8 ounces baby Bella/cremini mushrooms (sliced) CREAMY CHEESE SAUCE 2 cups low sodium chicken broth 1 Tablespoon cornstarch 2 Tablespoons unsalted butter 1 Tablespoons olive oil 1/3 cup flour 2 cups milk (whole milk or half & half) 2 teaspoons chicken bouillon (granulated, base or crushed cubes) 1 1/2 teaspoons Dijon mustard 1 1/2 teaspoons Worcestershire sauce 1 teaspoon parsley 1 teaspoon basil 1/2 teaspoon thyme ½ teaspoon salt ½ teaspoon pepper 2 cups sharp cheddar cheese (freshly grated) 1 cup Gruyère cheese (shredded) 1/2 cup Parmesan cheese (freshly grated) CRUMB TOPPING (OPTIONAL) 3/4 cup butter cracker crumbs or panko breadcrumbs 1 Tablespoon butter 1 Tablespoon olive oil HOW I MAKE THIS:
