Happy New Year! And nothing screams New Year like Chinese food! I can't wait until the Chinese New Year to share this with you! And whether you are celebrating the Year of the Rat, or celebrating the start of 2020, you are going to LOVE these tender and delicious Chicken Egg Rolls with Sweet & Sour Sauce. We actually enjoyed these on New Year's Day - the perfect little appetizer is also a perfect dinner when you serve it with hot rice. And this Sweet & Sour Sauce, with just a hint of fresh pineapple juice and Asian Sweet Chili Sauce, is WONDERFUL drizzled on top of white or brown rice! These are easy enough to make ahead of time if you are serving at a party - prepare them the day before, and then just bake at 350 degrees for 10 minutes or until hot. The delectable Sweet & Sour Sauce will have you licking your fingers as well. I also use this as a marinade and glaze - it is so good, and also easy to prepare ahead of time. You may want to just go ahead and double this recipe, as you will be loving this sauce on just about everything - egg rolls, rice, chicken, salmon, or even pork tenderloins. SECRETS FOR MAKING HOMEMADE EGG ROLLS...
The first time I made these was many years ago with my good friend Roxanne. I think we made about a hundred of these, and then split them up for different parties we were hosting. If you have never rolled egg rolls, it is so easy and fun, especially when you're doing it with a life-long friend! Wishing you a wonderful, healthy and happy New Year - whenever you celebrate it!
INGREDIENTS:
SWEET & SOUR SAUCE: 1/4 cup natural pineapple juice (no sugar/syrup added) ½ cup red wine vinegar ¾ cup sugar 3 tablespoons ketchup 1 tablespoon soy sauce ½ teaspoon salt ¼ teaspoon ginger powder 1 tablespoon Thai or Asian Sweet Chili Sauce 2 teaspoons cornstarch CHICKEN EGG ROLLS: 1 lb. chicken breasts (boneless & skinless), cut into thin strips ½ cup onion (chopped) 2 cloves garlic (minced) 1 pkg. (12 oz.) Stir Fry Vegetables (snow peas, carrots, broccoli & bean sprouts) 1 red bell pepper (cored & sliced) 1 cup pineapple tidbits in natural juice (drained well) 1 tablespoon sesame oil ¼ cup Sweet & Sour Sauce 1 pkg. (16) egg roll wrappers 1 quart vegetable oil (for frying) Nonstick cooking spray (if baking) HOW I MAKE THESE:
YIELD: 16 egg rolls, 1 cup Sweet & Sour Sauce RECIPE NOTES: TO REHEAT CHICKEN EGG ROLLS: These Chicken Egg Rolls are best eaten when hot and the wrappers are still crispy, but you can reheat if needed.
