The raspberries are starting to come in fast and furious on our plants, and it is always a race to pick them before the birds or my little ones can find them all!
This sweet and tangy Raspberry Key Lime Jam is perfect on warm croissants with a little fresh butter, or slathered on top of buttermilk pancakes.
I also use it to glaze fresh Key Lime Bars, Key Lime Pie and Key Lime Cheesecake - it really adds so much "extra" and everyone always goes nuts!
If you are making fresh Key Lime Cupcakes and want to fancy them up a bit, you can also use this as a filling for your cupcakes - a tablespoon is all it takes to create a wonderful surprise!
