I'm beginning to think that Winter may never end! For a season that has been incredibly kind to us - we got a surprise winter storm today and expect 4 to 9 inches of heavy snow. Great night for the guys to start the tent-camping season! Good thing that we have some warm comfort food ready in the oven - they will start their weekend adventure with warm and happy tummies! This spin on baked macaroni and cheese is one of our favorites - super creamy and cheesy, super flavorful and the seasoned Hawaiian bread crumb topping will knock your socks off! Don't let the name fool you - the nacho flavoring is not intense - but everyone notices something delicious about this flavorful cheese sauce - it is very subtle and surprising. A combination of three cheeses (aged cheddar, smoked gouda and cream cheese) make an incredibly creamy texture, and the touch of smoked paprika gives a nice hint of additional flavor. Did you know that one of the primary seasonings in Dorito Nacho Chips is smoked paprika? No wonder then that the kids are just nuts about this! I usually use cavatappi or rotini macaroni, but you can use your favorite shape, or a combination - whatever makes you happy! You can either toast Hawaiian sweet dinner rolls or bread in your toaster, or toast in your toaster oven or oven (250 degrees until dry and golden). A quick whirl in your food processor or blender, or a quick chop with a knife is all that they need before adding melted butter and another small touch of smoked paprika. Sprinkle over the top and you will have another favorite bread crumb topping! If you are lucky enough to have leftovers, give a quick splash of milk before reheating, and you will have creamy, delicious and melty Baked Nacho Macaroni with Three Cheeses to enjoy all over again!
