Ahhhhhhhh….where to start with these beauties? Sometimes you want an almond shortbread cookie, other times some velvety smooth Nutella chocolate is what you're craving. Combine the two, and it's bliss in a bar! Almond Roca Bars are so easy to make, and they melt in your mouth!
The tender soft almond shortbread comes together in about five minutes, and before you can blink an eye, you are spreading a luscious layer of velvety smooth Nutella and chocolate over the golden cookie bar top. Sprinkle liberally with some fresh sliced almonds, and you are ready to go!
Perfect for holiday cookie trays or tucked into a gift box for someone special!
The hard part is waiting until the melted almond and chocolate topping is ready to eat!
1 cup (2 sticks) butter (softened to room temperature)
1/2 cup white sugar
1/2 cup brown sugar
1 egg (room temperature)
1 teaspoon almond extract
1/4 teaspoon salt
2 cups all purpose flour
1 1/2 cups semi-sweet or milk chocolate chips
1/4 cup Nutella hazelnut spread
1 cup sliced almonds
