Chocolate Cakes: 1 1/2 cups granulated sugar 1/2 cup packed light brown sugar 3/4 cup unsweetened cocoa powder 1 tsp baking soda 3/4 tsp salt 1 cup boiling water or hot strong coffee 3/4 cup canola oil 2 large eggs (room temperature) 3 large egg yolks (room temperature) 1 Tablespoon vanilla extract 2 cups all-purpose flour 1/3 cup milk 1/3 cup sour cream Chocolate Mousse Filling: 6 oz (170g) dark chocolate bar finely chopped 4 Tablespoons (57g) unsalted butter (cut into 4 pieces) 5 large eggs whites ¼ cup (50g) granulated sugar divided ⅛ teaspoon salt 1 teaspoon pure vanilla extract ½ cup (118 ml) heavy cream Chocolate Ganache: 6 ounces Dark Chocolate (I use Ghirardelli) ½ cup heavy whipping cream Garnish: Confetti Sprinkles HOW I MAKE THIS:
