Now that winter has returned, there is nothing better than a home-cooked dinner...and nothing smells better than an Old Fashioned Pot Roast with Vegetables, cooking away in the slow cooker! And there are only a few words necessary to describe this..."World's Best!" I've tried a lot of recipes through the years, but this is the one that I come back to over and over again...consistently flavorful, moist and fabulous! Rave reviews every time that I make this! In addition to being just so darn simple to make, the flavor in the meat and vegetables is layered and absolutely perfect! Part of the secret is seasoning the fresh, thick pot roast with flavorful herbs and spices, and letting it sit overnight in the fridge. To save time the next day, you can also peel and cut-up the onions, celery, carrots and potatoes and store them in a ziplock bag in the fridge as well. The next morning, sear the meat for a few minutes, and start loading up your slow cooker! The vegetables are drizzled with olive oil and seasoning and sautéed in the same pan before being added to the slow cooker, and those 5 minutes make for the most flavorful vegetables you have ever had! Pan juices are perfectly seasoned, and it only takes a few minutes to whisk up a flavorful beefy gravy to drizzle over the top. Garnish with a little bit of snipped parsley, and dinner is served!
