My first daughter has loved to cook and bake with me since she was old enough to sit on the counter and help stir muffins. (Actually all my kids loved baking when they were little, and that joy of cooking continues to today - some of my favorite memories are of baking with my gram, my mom, my wonderful children, and now my grandbabies!) And through the years that has grown to include many cooking classes that we have taken together. One of our favorites was a Candy Making Workshop that we took at Viking Cooking School. All the little tricks of the trade...how to temper chocolate, how to correctly make homemade caramel...so much fun! And homemade Turtles are one of our favorites - old-fashioned Caramel & Pecan Candies that are perfection! For my birthday celebration this year, my girls put together a smorgasbord of appetizers and treats, and we celebrated with a day long party on the deck. So much fun to see them cook and bake all of their favorites, and so relaxing for me! And these Turtles are one of our all-time favorites!  This isn't a cheater recipe....homemade caramel and tempered chocolate really do make a difference when you are making these homemade turtles! If you want the creamiest, ooey-ist and gooey-ist caramel, this one is perfect! It takes a little bit of time to make, but the results are spectacular and well worth your time and effort! Pick your favorite chocolate as well - milk chocolate, semi-sweet or deep dark chocolate. It's fun to use a variety if you are making these for a party or holiday. Salty and sweet, rich chocolate and chewy caramel, crunchy pecans....does it get any better than this? Only when you're making these with a special girl!  You can also drizzle a little melted white chocolate over the top, or for an even more spectacular candy, drizzle with a spoonful of salted caramel and sprinkle with sea salt. SPECTACULAR! And these are so much fun to make with someone special...a glass of wine, some good music, and some Caramel Pecan Turtle making...it's all good!
