This has been such a long, blustery and wintery week - it's beginning to feel like Winter will never end. One of our favorite chicken flavors is Teriyaki Chicken - especially wonderful on the grill with fresh roasted pineapple, sweet onions and peppers. But with the winter dragging on, we needed our favorite baked up for a flavorful dinner. When I bake this in the oven, I typically roast the chicken in flavorful broth and pineapple juice. After baking for a short period (40 minutes), the chicken breasts or thighs are removed from the broth, and then baked and glazed to finish up the flavor. So moist - and the flavor just radiates thru the tender chicken.
I roasted fresh baby asparagus with garlic and cooked up a flavorful wild rice pilaf. You can drizzle additional teriyaki glaze over the roasted vegies for an additional kick. So good!
