I start with drizzling some extra virgin olive oil on top of the fresh salmon fillet, and then adding a healthy sprinkle of blackening spices - chili powder, smoked paprika, ginger, cumin, cayenne pepper and brown sugar. Let the spices "rest" on the salmon while you preheat your oven or grill.
We grill our fresh salmon ten minutes for every inch of thickness - and it is always spot-on! The spice in this rub caramelize just perfectly on the salmon for delicious flavor.
The fresh Mango Salsa is best if you make it an hour before serving. Cut up one ripe mango, some red onion, red or yellow tomatoes, fresh garlic, jalapeno or red pepper, fresh cilantro, and a drizzle of honey and the juice from one lime.
The honey gives it a nice glaze and just the right amount of sweetness - and the fresh lime juice just makes it perfect! On more than a few occasions I have also used this recipe for a fresh Mango Salsa to serve with tortilla chips as an appetizer - SO GOOD!
You can see how moist and perfect the salmon turned out - now all you need to do is whip some up and enjoy! The spices and brown sugar combine to make the most wonderful and delicious glaze.
