Other than my own Mom's rolled sugar cookies, which are fabulous but time-consuming, these are my absolute favorite soft and chewy sugar cookies! These are so basic, but so good! Comforting, soft and absolutely delicious warm from the oven...you'll probably want to just go ahead and make a double batch to begin with! Make sure to use REAL butter and REAL vanilla - they make all the difference in the world. The edges are just the slightest bit crisp, and the center is tender and chewy. While I usually make these at Thanksgiving and Christmas time, every time I make them I ask myself why I don't make them more often....the kids adore them! Let's talk about frosting....or not. These are absolutely wonderful just rolled in granulated sugar - plain and simple, soft & chewy sugar cookies. But if you want to frost these, make a real batch of homemade Buttercream Frosting. You will ruin these if you put crappy frosting on them! Frost with an offset spatula, sprinkle with your favorite sprinkles or mini M&M's. You can also put your Buttercream Frosting in a ziploc bag and snip of the corner, and then drizzle the top of each cookie - very pretty! Allow the frosting to dry and set before storing between layers of parchment paper in an air-tight container. These are best fresh, within a day or two of baking, but you can freeze these easily and pull them out the day that you want to serve if you would like to make them ahead of time. Another favorite trick - you can roll these in cinnamon-sugar before baking, and voila! The best soft & chewy SNICKERDOODLES you ever had!
The nice thing about this recipe is that you can make it your own - and each batch can make a plethora of different cookies from each batch - perfect on a cookie plate or for bringing to a party! Hope that you love these as much as we do!
