 Rhubarb Salsa Tonight kicks off a weekend of lots of fun activities for us. Baseball games, birthday parties and anniversary celebration combined with sunshine and our favorite family and friends usually means appetizers to nibble on and relaxing beverages to sip on! And we're enjoying this fabulous Rhubarb Salsa tonight! With Cinco de Mayo just a week away, we've got to start getting our salsa vibe on, and this surprising twist on traditional salsa is so fresh and flavorful that it is disappearing like magic!  Fresh Rhubarb Salsa You may think that rhubarb is a strange ingredient for salsa, but it adds just the perfect tart and sweet tang that is perfect with the fresh lime juice and brown sugar drizzled throughout. After chilling for a half hour or so, you'll be scooping this stuff up like crazy! This crazy good salsa is loaded with fresh taste and textures. Everyone is always surprised that it doesn't contain tomatoes - but the flavor is totally addictive and perfect with tortilla chips or strips, but also WONDERFUL spooned on top of tacos, grilled chicken or fish.
If you've never tried rhubarb except in sweet desserts, you will be surprised at how well it works in salsa! I'm surprised how many people think that the rhubarb in this is red onion - it has a delicate pink and red hue to it, but most everyone is surprised to figure out the secret ingredient! Skipper just mixed up some fresh strawberry rhubarb margaritas to go with this... I'm so happy that rhubarb season is finally kicking off!  Rhubarb Salsa
