 Raspberry Jam When we moved from Minnesota, we brought along some of the raspberry bushes that we had been growing for years. While the movers were finished unloading boxes and assembling the backyard playset (we certainly had our priorities straight!), one of the first orders of business was for Skipper to plan some of the transplanted plants from our old home to our new home. The next year a new friend offered me dozens of red raspberry plants and the best BLACK raspberry plants, which over the past 14 years have continued to grow, spread and thrive! If the kids aren't picking berries and eating right from the plants, I am lucky to capture bountiful crops each year of fresh, juicy berries - and one of our favorite ways to enjoy this is in fresh Raspberry Jam and Raspberry Rhubarb Jam.  Fresh Raspberry Jam This jam is just so stinkin' easy to make! Equal parts of fresh, ripe raspberries and sugar, with a squeeze of fresh lemon juice, juice up into the most fabulous jam you have ever had! This jam is absolutely loaded with fresh raspberry flavor, and it is the most beautiful deep red color you have ever seen!  Raspberry Jam Perfect on warm toast, croissants, or slathered on pancakes! I also use this as a topping for my Lemon Raspberry Bars - SO GOOD! Of course, the littles like this on peanut butter sandwiches - I remember enjoying these during backyard picnics when I was little as well - they are perfect for lunch in a blanket tent or sunny picnic table!
