Are you ready for some summer fun? It's hard to believe that Memorial Day weekend is racing towards us...and the official kick-off of summertime barbeques and picnics! We have our standard family favorites - burgers, ribs and steaks on the grill, and all the wonderful sides that go along. There's no messing with those! This Raspberry Chipotle Barbecue Sauce, Marinade & Glaze is magic - the perfect blend of sweet and spicy, and about as versatile as it gets. It starts out sweet, but warms up with a savory, smoky kick that we love on grilled chicken, kabobs, barbequed ribs and pork tenderloin. It also makes a great dipping sauce - you just can't believe how wonderful this is with hot Chinese Cream Cheese Puffs - SO GOOD! And if you're looking for a fabulously easy and delicious appetizer, pour this beautiful sauce over a block of cream cheese and serve with crackers or fresh vegies. Always a fan favorite! You can hardly go wrong when you start with sweet fresh raspberries, and they really are the heart of this sauce. A combination of brown sugar and granulated sugar gives this a raspberry jam feel to it to start with. The addition of sautéed onions and garlic starts to layer the flavor, and the addition of sauteed jalapeño and chipotles add the heat. If you prefer a smooth sauce, you can strain your fresh raspberries through a mesh strainer to get rid of the raspberry seeds - but it will really cut down on flavor and texture. A spoonful or two of adobo sauce from the chipotle peppers helps kick up the heat and flavor as well. While this is simmering away happily on your stove, give it a quick taste. If you want it a little bit hotter, add another spoonful of adobo sauce - and if you want it sweeter, add brown sugar or agave syrup to taste. This sauce will thicken slightly as it cools, and you can store it in your refrigerator for a week or two - if it lasts that long! I love that I can make batches of this ahead of time and have them waiting to pull out for a fabulous dinner or appetizer. Smoky and sweet, with just a hint of heat...it's the perfect blend, and finger-licking-good! Hope that you have a chance to try this out - and please let me know if you love it as much as we do!
