My family loves Banana Bread - plain, simple, every day! But add fresh raspberries to the mix, and this takes it to a whole new level - SO GOOD! This recipes works the best with fresh, ripe red raspberries - frozen berries just get too soggy for the bread. Lucky that I froze some fresh berries this summer while I was able to capture them faster then my little ones and the birds! This is one of those crazy combos that I have tried several different ways - but it never seemed to turn out quite right. But I finally figured out the secret! Crush the berries - rather than trying to keep them whole - and the bread turns out with the perfect texture, flavor and is so moist! You can make one large, four medium or eight small loaves from one recipe. For special occasions and gift-giving, I usually glaze the warm Raspberry Banana Bread after I take it out of the oven - it makes for such a sweet topping and tastes as wonderful as it is pretty! Slathered with a smear of fresh butter, and you are good to go! I'll bet everyone at your house will love this recipe as much as we do! Enjoy!
